Instructions

Step 1: Prepare the Asparagus

  1. Trim the Asparagus: Remove the tough, woody ends of the asparagus by snapping or cutting off the bottom 1-2 inches.
  2. Season the Asparagus: Toss the asparagus spears with olive oil, a pinch of salt, and black pepper.

Step 2: Prepare the Puff Pastry

  1. Roll Out the Pastry: On a lightly floured surface, roll out the puff pastry sheet into a 12×12-inch square.
  2. Cut into Strips: Using a sharp knife or pizza cutter, cut the pastry into 12 equal strips, about 1 inch wide.

Step 3: Assemble the Bundles

  1. Wrap with Prosciutto: Take two asparagus spears and wrap them tightly together with a slice of prosciutto.
  2. Wrap with Pastry: Starting at one end, wrap a strip of puff pastry around the asparagus and prosciutto, overlapping slightly as you go. Leave the tips of the asparagus exposed for an elegant look.
  3. Repeat: Continue wrapping until all the asparagus and puff pastry strips are used.

Step 4: Add Optional Toppings

  1. Cheese and Herbs: If using, sprinkle shredded Gruyère or Parmesan and a pinch of Italian seasoning onto the puff pastry before wrapping.
  2. Egg Wash: Beat the egg with 1 tablespoon of water, then brush the tops of the bundles with the egg wash for a shiny, golden finish.
  3. Seeds for Garnish: Sprinkle sesame seeds or poppy seeds on top of the bundles, if desired.

Step 5: Bake the Bundles

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange on the Sheet: Place the assembled bundles on the prepared baking sheet, leaving a bit of space between them.
  3. Bake: Bake for 18-20 minutes, or until the puff pastry is golden brown and crisp.
