For the Bundles
- 1 sheet frozen puff pastry, thawed
- 12 thin slices of prosciutto
- 24 fresh asparagus spears (about 1 bunch), trimmed
- 1 tbsp olive oil
- Salt and black pepper to taste

- 1 tbsp water
Optional Additions
- ½ cup shredded Gruyère or Parmesan cheese
- 1 tsp dried Italian seasoning
- Sesame seeds or poppy seeds for garnish
Instructions
Step 1: Prepare the Asparagus
- Trim the Asparagus: Remove the tough, woody ends of the asparagus by snapping or cutting off the bottom 1-2 inches.
- Season the Asparagus: Toss the asparagus spears with olive oil, a pinch of salt, and black pepper.
Step 2: Prepare the Puff Pastry
- Roll Out the Pastry: On a lightly floured surface, roll out the puff pastry sheet into a 12×12-inch square.
- Cut into Strips: Using a sharp knife or pizza cutter, cut the pastry into 12 equal strips, about 1 inch wide.
Step 3: Assemble the Bundles
- Wrap with Prosciutto: Take two asparagus spears and wrap them tightly together with a slice of prosciutto.
- Wrap with Pastry: Starting at one end, wrap a strip of puff pastry around the asparagus and prosciutto, overlapping slightly as you go. Leave the tips of the asparagus exposed for an elegant look.
- Repeat: Continue wrapping until all the asparagus and puff pastry strips are used.
Step 4: Add Optional Toppings
- Cheese and Herbs: If using, sprinkle shredded Gruyère or Parmesan and a pinch of Italian seasoning onto the puff pastry before wrapping.
- Egg Wash: Beat the egg with 1 tablespoon of water, then brush the tops of the bundles with the egg wash for a shiny, golden finish.
- Seeds for Garnish: Sprinkle sesame seeds or poppy seeds on top of the bundles, if desired.
Step 5: Bake the Bundles
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange on the Sheet: Place the assembled bundles on the prepared baking sheet, leaving a bit of space between them.
- Bake: Bake for 18-20 minutes, or until the puff pastry is golden brown and crisp.
Step 6: Serve
- Cool Slightly: Let the bundles cool for 5 minutes before serving.
- Garnish: Serve warm, garnished with additional Parmesan or fresh herbs if desired.
