For the Mojo Marinade

  • 1 tsp salt

  • 1 lb boneless, skinless chicken breasts or thighs

For the Sandwiches

  • 8 slices Cuban bread (or French or Italian bread as substitutes)
  • 4 tbsp unsalted butter, softened
  • 4 slices Swiss cheese
  • 4 slices smoked ham
  • 1 cup dill pickle slices
  • ¼ cup Dijon mustard

Instructions

Step 1: Marinate the Chicken

  1. Prepare the Marinade: In a medium bowl, whisk together orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, and black pepper.
  2. Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it’s fully coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for maximum flavor.

Step 2: Grill the Mojo Chicken

  1. Preheat the Grill: Preheat a grill or grill pan to medium-high heat.
  2. Cook the Chicken: Remove the chicken from the marinade, letting excess marinade drip off. Grill the chicken for 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
  3. Rest and Slice: Let the chicken rest for 5 minutes before slicing it thinly.

Step 3: Assemble the Sandwiches

  1. Prepare the Bread: Spread a thin layer of softened butter on the outside of each slice of bread.
  2. Layer the Ingredients:
    • Spread Dijon mustard on the inside of each slice of bread.
    • On one slice, layer Swiss cheese, a slice of smoked ham, sliced mojo chicken, and dill pickles.
    • Top with another slice of bread, buttered side out.

Step 4: Grill the Sandwiches

  1. Heat the Pan: Preheat a skillet, griddle, or panini press over medium heat.
  2. Cook the Sandwiches: Place the sandwiches in the pan and press them down gently with a spatula or grill press. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
