For the Mojo Marinade
- ½ cup orange juice (freshly squeezed preferred)
- ¼ cup lime juice (freshly squeezed)
- ¼ cup olive oil
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 1 lb boneless, skinless chicken breasts or thighs
For the Sandwiches
- 8 slices Cuban bread (or French or Italian bread as substitutes)
- 4 tbsp unsalted butter, softened
- 4 slices Swiss cheese
- 4 slices smoked ham
- 1 cup dill pickle slices
- ¼ cup Dijon mustard
Instructions
Step 1: Marinate the Chicken
- Prepare the Marinade: In a medium bowl, whisk together orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, and black pepper.
- Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it’s fully coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for maximum flavor.
Step 2: Grill the Mojo Chicken
- Preheat the Grill: Preheat a grill or grill pan to medium-high heat.
- Cook the Chicken: Remove the chicken from the marinade, letting excess marinade drip off. Grill the chicken for 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
- Rest and Slice: Let the chicken rest for 5 minutes before slicing it thinly.
Step 3: Assemble the Sandwiches
- Prepare the Bread: Spread a thin layer of softened butter on the outside of each slice of bread.
- Layer the Ingredients:
- Spread Dijon mustard on the inside of each slice of bread.
- On one slice, layer Swiss cheese, a slice of smoked ham, sliced mojo chicken, and dill pickles.
- Top with another slice of bread, buttered side out.
Step 4: Grill the Sandwiches
- Heat the Pan: Preheat a skillet, griddle, or panini press over medium heat.
- Cook the Sandwiches: Place the sandwiches in the pan and press them down gently with a spatula or grill press. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Serve: Slice each sandwich in half and serve warm.
