  • Fresh parsley, chopped
  • Crushed red pepper flakes

Instructions

Step 1: Prepare the Filling

  1. In a large bowl, combine the ricotta cheese, cream cheese, mozzarella, Parmesan, minced garlic, onion powder, nutmeg (if using), salt, and pepper. Mix until smooth and creamy.
  2. Fold in the chopped spinach, ensuring it’s evenly distributed throughout the mixture. If using frozen spinach, ensure it is fully thawed and squeezed dry to prevent excess moisture.

Step 2: Prepare the Tortillas or Pastry

  • If using tortillas: Lay each tortilla flat on a clean surface and lightly brush with olive oil or melted butter for extra flavor.
  • If using puff pastry: Roll out the pastry sheets on a lightly floured surface to smooth any creases. Cut into 4 equal rectangles per sheet.

Step 3: Assemble the Roll-Ups

  1. Spread a generous layer of the spinach filling evenly over each tortilla or pastry rectangle, leaving about 1/2 inch of space around the edges.
  2. Roll each tortilla or pastry tightly from one end to the other, forming a log. If using tortillas, you can secure them with toothpicks if needed.
  3. For puff pastry, seal the edges by pressing lightly, and brush the tops with the beaten egg for a golden finish.

Step 4: Slice and Bake

  • For tortillas: Cut each rolled tortilla into 4 equal pieces, creating pinwheels. Arrange the pinwheels on a parchment-lined baking sheet. Bake at 375°F (190°C) for 15–20 minutes, or until lightly golden and heated through.
  • For puff pastry: Arrange the rolls on a parchment-lined baking sheet, seam-side down. Bake at 400°F (200°C) for 15–20 minutes, or until the pastry is puffed and golden brown.
