BBQ Chicken Grilled Cheese

  • Author: Sophia
  • Total Time: 20 minutes
  • Yield: 2 sandwiches 1x

Ingredients

Scale

For the Sandwich:

  • 1 cup shredded cooked chicken (rotisserie or grilled)
  • ¼ cup BBQ sauce (use your favorite brand)
  • 4 slices of bread (sourdough, Texas toast, or brioche work best)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tablespoon mayonnaise (optional, for extra crispiness)

Optional Additions:

  • 2 tablespoons caramelized onions
  • 1 teaspoon hot sauce (for a spicy kick)
  • 2 slices of crispy bacon
  • ½ avocado, sliced
  • 2 tablespoons chopped cilantro (for garnish)

Instructions

Step 1: Prepare the BBQ Chicken

In a small bowl, combine the shredded chicken and BBQ sauce, mixing until the chicken is evenly coated. If using leftover grilled or rotisserie chicken, warm it up slightly in a pan or microwave for better texture and flavor.

Step 2: Prep the Bread

Lay out the bread slices on a flat surface. Spread butter on one side of each slice. For extra crispiness, spread a thin layer of mayonnaise on the same side as the butter (this helps achieve a golden, crispy crust).

Step 3: Assemble the Sandwich

  • Flip two slices of bread over (buttered side down).
  • Sprinkle a layer of shredded cheese evenly over the unbuttered side.
  • Spread the BBQ chicken mixture over the cheese.
  • Add any extra toppings (bacon, caramelized onions, etc.).
  • Sprinkle another layer of cheese on top before placing the second slice of bread (buttered side up).

Step 4: Cook the Sandwich

  • Heat a nonstick skillet or griddle over medium-low heat.
  • Place the sandwich in the skillet and cook for 3-4 minutes on one side until golden brown.
  • Flip carefully and cook for another 3-4 minutes until the cheese is fully melted and the bread is crispy.
  • Press down gently with a spatula to ensure even melting.

Step 5: Serve and Enjoy

Remove from heat, let it rest for a minute, then slice in half and serve hot! Garnish with fresh cilantro or a drizzle of extra BBQ sauce for added flavor.
