Instructions
1. Prepare the Zucchini
- Grate the Zucchini: Wash the zucchinis and grate them using a box grater or food processor.
- Remove Excess Moisture: Place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much water as possible. Removing excess moisture ensures the bites are crispy rather than soggy.
2. Make the Mixture
- Combine Ingredients: In a large mixing bowl, combine the grated zucchini, beaten egg, breadcrumbs, Parmesan cheese, minced garlic, parsley, salt, pepper, and Italian seasoning. Mix well until the ingredients are evenly incorporated.
- Form the Bites: Scoop about 1 tablespoon of the mixture and roll it into a small ball. Flatten slightly to form a patty. Repeat until all the mixture is used.
3. Cook the Bites
Oven Method:

- Bake: Place the zucchini bites on the prepared baking sheet, leaving a little space between each one. Spray or drizzle the tops with olive oil. Bake for 10 minutes, then flip and bake for an additional 8-10 minutes, or until golden brown and crispy.
Air Fryer Method:
- Preheat Air Fryer: Preheat the air fryer to 375°F (190°C).
- Cook: Arrange the bites in a single layer in the air fryer basket. Spray lightly with olive oil. Cook for 8-10 minutes, flipping halfway through, until golden and crisp.
Stovetop Method:
- Heat a Skillet: Heat a tablespoon of olive oil in a non-stick skillet over medium heat.
- Pan-Fry the Bites: Place the zucchini bites in the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
4. Serve
- Plate the Bites: Arrange the cooked zucchini garlic bites on a serving platter.
