For the Chicken Salad:
- 2 large chicken breasts (about 1 pound), cooked and shredded
- 1 cup cucumber, finely diced
- ½ cup cherry tomatoes, halved
- ½ cup red onion, finely diced
- ½ cup Kalamata olives, sliced (optional)
- ¼ cup crumbled feta cheese (optional)
- 3 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
For the Tzatziki Dressing:
- 1 cup plain Greek yogurt (full-fat or low-fat)
- 1 small cucumber, grated and squeezed to remove excess moisture
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic, minced
- 1 teaspoon red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
For Serving (Optional):
- Pita bread or wraps
- Mixed greens or lettuce
- Lemon wedges
Instructions
Step 1: Prepare the Tzatziki Dressing
- Grate a small cucumber using the large holes of a box grater. Place the grated cucumber in a clean kitchen towel or paper towel and squeeze out as much water as possible.
- In a mixing bowl, combine the Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, red wine vinegar, dried oregano, salt, and black pepper. Stir until well combined. Taste and adjust the seasoning as needed. Chill the dressing in the refrigerator while you prepare the rest of the salad.
Step 2: Cook the Chicken
- If the chicken is not already cooked, season the chicken breasts with salt, pepper, and a sprinkle of oregano. Heat a skillet over medium heat with a drizzle of olive oil.
- Cook the chicken for about 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the heat and let it rest for 5 minutes.
- Shred or dice the cooked chicken into bite-sized pieces.
Step 3: Prepare the Salad Base
- In a large mixing bowl, combine the diced cucumber, cherry tomatoes, red onion, Kalamata olives (if using), feta cheese (if using), fresh dill, and parsley.
- Add the shredded chicken to the bowl and toss gently to combine.
Step 4: Assemble the Tzatziki Chicken Salad
- Pour the prepared tzatziki dressing over the chicken and vegetable mixture. Toss everything together until well coated.
- Taste and adjust seasoning if necessary.
Step 5: Serve
- Serve the Tzatziki Chicken Salad as-is, over a bed of greens, stuffed into pita bread, or as a wrap. Garnish with extra dill or a squeeze of lemon juice for added freshness.
