  • Author: Sophia
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

For the Onions

  • 23 large sweet onions (e.g., Vidalia or Walla Walla), peeled and sliced into 1/2-inch rings
  • 2 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Cheese Topping

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme (or fresh thyme leaves for garnish)

For Garnish (Optional)

  • 2 tbsp chopped fresh parsley
  • 1/4 cup crispy fried onions or breadcrumbs for crunch

Instructions

Step 1: Prepare the Onions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel the onions and slice them into 1/2-inch-thick rings. Separate the rings and arrange them in a single layer in the prepared baking dish.
  3. Drizzle the melted butter and olive oil over the onions. Sprinkle with salt and black pepper, tossing gently to coat evenly.

Step 2: Make the Cheese Topping

  1. In a mixing bowl, combine the shredded mozzarella, Parmesan, and cheddar cheeses.
  2. Add the mayonnaise, sour cream, garlic powder, smoked paprika, and dried thyme. Stir until well combined.

Step 3: Assemble the Dish

  1. Spoon the cheese mixture evenly over the onion rings, making sure each ring is generously coated.
  2. Sprinkle additional cheese or breadcrumbs on top for extra texture, if desired.

Step 4: Bake

  1. Cover the baking dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake uncovered for an additional 10 minutes, or until the cheese is golden and bubbly.

Step 5: Garnish and Serve

  1. Remove the dish from the oven and let it cool slightly. Sprinkle with fresh parsley and crispy fried onions, if using, before serving.
  2. Serve warm as a side dish, appetizer, or topping.
