  • Author: Sophia
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Steak Bites

  • 1.5 lbs sirloin steak or tenderloin, cut into 1-inch cubes
  • 2 tbsp olive oil or vegetable oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for spice)

For the Creamy Parmesan Sauce

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional, for depth of flavor)
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

Step 1: Prepare the Steak Bites

  1. Pat the steak cubes dry with a paper towel to remove excess moisture. This ensures a perfect sear.
  2. In a mixing bowl, toss the steak bites with smoked paprika, salt, black pepper, and red pepper flakes if using.

Step 2: Sear the Steak Bites

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the steak bites in a single layer, ensuring they are not overcrowded. Cook for 2-3 minutes on each side, until browned and caramelized. For medium-rare, cook to an internal temperature of 135°F.
  3. Remove the steak bites from the skillet and set aside, covering loosely with foil to keep warm.

Step 3: Make the Garlic Butter

  1. Reduce the heat to medium and add the butter to the skillet. Let it melt and then stir in the minced garlic.
  2. Cook for 30 seconds to 1 minute until the garlic is fragrant but not browned.
  3. Return the steak bites to the skillet, tossing them gently to coat in the garlic butter. Remove the steak bites and set aside.

Step 4: Make the Creamy Parmesan Sauce

  1. In the same skillet, melt the butter for the sauce over medium heat. Add the minced garlic and sauté for 1 minute.
  2. Stir in the heavy cream, scraping up any browned bits from the bottom of the skillet to incorporate into the sauce.
  3. Add the grated Parmesan cheese, salt, black pepper, and nutmeg if using. Stir until the cheese is fully melted and the sauce thickens slightly, about 3-5 minutes.

Step 5: Assemble and Serve

  1. Return the steak bites to the skillet, tossing them gently in the creamy Parmesan sauce until well coated.
  2. Garnish with chopped parsley and serve immediately with your choice of sides.
