- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional, for depth of flavor)
- 2 tbsp chopped fresh parsley, for garnish
Instructions
Step 1: Prepare the Steak Bites
- Pat the steak cubes dry with a paper towel to remove excess moisture. This ensures a perfect sear.
- In a mixing bowl, toss the steak bites with smoked paprika, salt, black pepper, and red pepper flakes if using.
Step 2: Sear the Steak Bites
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the steak bites in a single layer, ensuring they are not overcrowded. Cook for 2-3 minutes on each side, until browned and caramelized. For medium-rare, cook to an internal temperature of 135°F.
- Remove the steak bites from the skillet and set aside, covering loosely with foil to keep warm.
Step 3: Make the Garlic Butter
- Reduce the heat to medium and add the butter to the skillet. Let it melt and then stir in the minced garlic.
- Cook for 30 seconds to 1 minute until the garlic is fragrant but not browned.
- Return the steak bites to the skillet, tossing them gently to coat in the garlic butter. Remove the steak bites and set aside.
Step 4: Make the Creamy Parmesan Sauce
- In the same skillet, melt the butter for the sauce over medium heat. Add the minced garlic and sauté for 1 minute.
- Stir in the heavy cream, scraping up any browned bits from the bottom of the skillet to incorporate into the sauce.
- Add the grated Parmesan cheese, salt, black pepper, and nutmeg if using. Stir until the cheese is fully melted and the sauce thickens slightly, about 3-5 minutes.
Step 5: Assemble and Serve
- Return the steak bites to the skillet, tossing them gently in the creamy Parmesan sauce until well coated.
- Garnish with chopped parsley and serve immediately with your choice of sides.
