Instructions
Step 1: Bake the Tater Tots
- Preheat your oven according to the package instructions for the tater tots (usually 425°F or 220°C).
- Spread the tater tots in a single layer on a baking sheet. Sprinkle with smoked paprika and garlic powder for added flavor.
- Bake the tater tots for 20–25 minutes, flipping halfway through, until golden brown and crispy.
Step 2: Make the Sausage Gravy
- While the tater tots are baking, heat a large skillet over medium heat. Add the ground breakfast sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked. Remove the sausage from the skillet and set it aside.
- In the same skillet, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1–2 minutes, whisking constantly, to remove the raw flour taste.
- Slowly pour in the milk, whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and cook until thickened, about 3–5 minutes.
- Stir in the cooked sausage, salt, black pepper, and cayenne pepper (if using). Keep the gravy warm over low heat, stirring occasionally.
Step 3: Cook the Scrambled Eggs
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Heat the butter in a nonstick skillet over medium-low heat. Once melted, pour in the egg mixture.
- Cook the eggs, stirring gently with a spatula, until soft and creamy. Avoid overcooking, as the eggs will continue to cook slightly after being removed from the heat.
Step 4: Assemble the Breakfast Bowls
