For the Taco Ranch Bites:
- 1 pound ground beef
- 1 packet taco seasoning mix (or homemade, about 2 tablespoons)
- 1/3 cup water
- 1/4 cup ranch dressing
- 24 mini flour tortillas or wonton wrappers
- 1 cup shredded cheddar cheese (or a Mexican blend)
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced green onions
For Optional Toppings:
- Sour cream
- Salsa
- Diced tomatoes
- Sliced jalapeños
- Chopped cilantro
For Dipping Sauce:
- 1/2 cup ranch dressing
- 1/4 cup salsa
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or use silicone muffin liners for easy cleanup.
Step 2: Prepare the Ground Beef
- Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked.
- Drain any excess grease from the skillet.
- Stir in the taco seasoning and water. Cook for 2-3 minutes until the mixture thickens.
- Remove from heat and let the mixture cool slightly before stirring in the ranch dressing.
Step 3: Assemble the Taco Ranch Bites
- If using mini tortillas, cut them into circles to fit the muffin tin cups. For wonton wrappers, no cutting is needed.
- Press each tortilla circle or wonton wrapper into a muffin cup to form a base.
- Fill each cup with a spoonful of the taco-ranch beef mixture.
- Top with a generous sprinkle of cheddar and Monterey Jack cheese.
Step 4: Bake the Bites
- Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are golden and crispy.
- Remove from the oven and let the bites cool in the tin for 5 minutes.
Step 5: Garnish and Serve
- Carefully remove the Taco Ranch Bites from the muffin tin and arrange them on a serving platter.
- Garnish with diced green onions, sour cream, or your favorite toppings.
- Serve warm with the ranch-salsa dipping sauce on the side.
