  • Author: Sophia
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the chicken:

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil (for cooking)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin

For the mango sauce:

  • 2 large ripe mangoes, peeled and cubed (about 2 cups)
  • 1/4 cup lime juice (about 2 limes)
  • 1 tablespoon honey (optional, for extra sweetness)
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 12 teaspoons red chili flakes (adjust to taste)
  • 1 tablespoon soy sauce
  • 1/2 teaspoon turmeric powder (optional, for color)

For garnish and serving:

  • Fresh cilantro leaves, chopped
  • Sliced red chili (optional, for extra heat)
  • Cooked jasmine rice, quinoa, or flatbread

Instructions

Step 1: Prepare the Chicken

  1. Season the chicken pieces with salt, black pepper, smoked paprika, and ground cumin. Toss to coat evenly and let it sit for 10 minutes while you prepare the mango sauce.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5–7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 2: Make the Mango Sauce

  1. While the chicken is cooking, add the mango cubes, lime juice, honey (if using), minced garlic, grated ginger, red chili flakes, soy sauce, and turmeric powder to a blender. Blend until smooth and creamy.
  2. Taste the sauce and adjust the sweetness or spice level as desired by adding more honey or chili flakes.

Step 3: Cook the Chicken with Mango Sauce

  1. Using the same skillet, reduce the heat to medium-low. Pour the mango sauce into the pan and bring it to a gentle simmer.
  2. Add the cooked chicken back to the skillet, tossing to coat it fully in the sauce. Let the chicken simmer in the sauce for 5–7 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

Step 4: Serve and Garnish

  1. Transfer the Spicy Mango Chicken to a serving dish or plate. Garnish with fresh cilantro and sliced red chili for extra heat, if desired.
  2. Serve hot with jasmine rice, quinoa, or flatbread to soak up the flavorful mango sauce.
