For the Salisbury Steaks:
- 1 pound ground beef (80/20 lean-to-fat ratio)
- 1/3 cup breadcrumbs
- 1 large egg
- 2 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Brown Gravy:
- 2 tablespoons unsalted butter
- 1 medium onion, thinly sliced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
- 1/4 teaspoon dried thyme (optional)
Optional Garnish:
- Fresh parsley, chopped
Instructions
Step 1: Prepare the Beef Patties
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Mix gently until all ingredients are just combined. Avoid overmixing to keep the patties tender.
- Divide the mixture into 4 equal portions and shape them into oval patties, about 1/2 inch thick.
Step 2: Sear the Patties
- Heat a large skillet over medium-high heat and add a drizzle of oil or a pat of butter.
- Add the patties to the skillet and cook for 3–4 minutes per side, or until browned. They don’t need to be fully cooked at this stage as they will finish cooking in the gravy.
- Remove the patties from the skillet and set them aside on a plate.
Step 3: Caramelize the Onions
- In the same skillet, melt the butter over medium heat. Add the sliced onions and cook for 8–10 minutes, stirring occasionally, until softened and golden brown.
Step 4: Make the Gravy
- Sprinkle the flour over the caramelized onions and stir well to coat. Cook for 1–2 minutes to eliminate the raw flour taste.
- Gradually pour in the beef broth, whisking constantly to prevent lumps.
- Stir in the Worcestershire sauce, Dijon mustard, thyme (if using), salt, and black pepper. Bring the mixture to a simmer and cook until the gravy thickens, about 3–4 minutes.
Step 5: Combine and Simmer
- Return the seared patties to the skillet, nestling them into the gravy.
- Reduce the heat to low, cover, and simmer for 10–12 minutes, or until the patties are fully cooked (internal temperature of 160°F).
- Spoon the gravy over the patties occasionally during cooking to infuse them with flavor.
Step 6: Garnish and Serve
- Garnish with freshly chopped parsley and serve hot over mashed potatoes, rice, or noodles.
