For the roasted tomatoes:

For the sandwich:
- 4 ciabatta rolls or 8 slices of crusty artisan bread
- 8 slices fresh mozzarella (about 1/4-inch thick)
- 8 slices prosciutto (thinly sliced)
- 1 cup fresh arugula
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze (store-bought or homemade)
- 2 tablespoons olive oil (for brushing the bread)
Instructions
Step 1: Roast the Tomatoes
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange the tomato slices on the baking sheet in a single layer. Drizzle them with olive oil and balsamic vinegar, then sprinkle with salt, pepper, and dried oregano.
- Roast the tomatoes in the oven for 15–20 minutes, or until they soften and begin to caramelize at the edges. Remove from the oven and let them cool slightly.
Step 2: Prepare the Bread
- Slice the ciabatta rolls in half (or if using bread slices, ensure you have pairs ready for assembling the sandwiches).
- Brush the cut sides of the bread with olive oil. If desired, lightly toast them on a grill or skillet for 2–3 minutes to enhance their flavor and texture.
Step 3: Assemble the Sandwiches
- Start by spreading a thin layer of balsamic glaze on the bottom half of each bread slice.
- Layer 2 slices of roasted tomato on each sandwich, followed by 2 slices of fresh mozzarella.
- Add 2 slices of prosciutto, folding them gently to create volume.
- Top with a handful of fresh arugula and a few basil leaves.
- Place the top half of the bread over the filling, pressing gently to hold everything in place.
Step 4: Serve and Enjoy
- For easier handling, you can cut the sandwiches in half before serving.
- Serve immediately and enjoy the delightful blend of flavors and textures!
