  • 8 slices prosciutto (thinly sliced)
  • 1 cup fresh arugula
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • 2 tablespoons olive oil (for brushing the bread)

Instructions

Step 1: Roast the Tomatoes

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the tomato slices on the baking sheet in a single layer. Drizzle them with olive oil and balsamic vinegar, then sprinkle with salt, pepper, and dried oregano.
  3. Roast the tomatoes in the oven for 15–20 minutes, or until they soften and begin to caramelize at the edges. Remove from the oven and let them cool slightly.

Step 2: Prepare the Bread

  1. Slice the ciabatta rolls in half (or if using bread slices, ensure you have pairs ready for assembling the sandwiches).
  2. Brush the cut sides of the bread with olive oil. If desired, lightly toast them on a grill or skillet for 2–3 minutes to enhance their flavor and texture.

Step 3: Assemble the Sandwiches

  1. Start by spreading a thin layer of balsamic glaze on the bottom half of each bread slice.
  2. Layer 2 slices of roasted tomato on each sandwich, followed by 2 slices of fresh mozzarella.
  3. Add 2 slices of prosciutto, folding them gently to create volume.
  4. Top with a handful of fresh arugula and a few basil leaves.
  5. Place the top half of the bread over the filling, pressing gently to hold everything in place.

  1. For easier handling, you can cut the sandwiches in half before serving.
