Rice Krispie Cookies with Chocolate Chips

  • Author: Sophia
  • Total Time: 37 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale

For the cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips

Optional Mix-Ins:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut
  • 1/2 cup white chocolate chips or butterscotch chips

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Beat in the eggs one at a time, followed by the vanilla extract. Scrape down the sides of the bowl to ensure everything is well combined.

Step 2: Combine Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  2. Gently fold in the Rice Krispies cereal and chocolate chips with a spatula, being careful not to crush the cereal.

Step 3: Portion the Dough

  1. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. The cookies will spread slightly as they bake.

Step 4: Bake the Cookies

  1. Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown but the centers are still slightly soft.
  2. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 5: Serve and Enjoy

  1. Once cooled, serve your Rice Krispie Cookies with Chocolate Chips alongside a glass of milk, a hot cup of coffee, or as a standalone treat.
