Instructions
Step 1: Prepare the Shrimp
- Rinse the shrimp under cold water and pat them dry with paper towels. Removing excess moisture ensures they will sear properly and develop a crispy crust.
- Place the shrimp in a mixing bowl and drizzle with olive oil. Toss to coat evenly.
Step 2: Make the Blackening Seasoning
- In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, and salt. Mix thoroughly to create the blackening seasoning.
- Sprinkle the seasoning evenly over the shrimp, tossing to ensure each piece is fully coated.
Step 3: Heat the Pan
- Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Allow the pan to get very hot—this is key to achieving the signature blackened crust.
- Add a tablespoon of olive oil or butter to the skillet and swirl to coat.
Step 4: Cook the Shrimp
- Place the seasoned shrimp in a single layer in the hot skillet, ensuring they’re not overcrowded. You may need to cook them in batches if necessary.
- Cook the shrimp for 2-3 minutes on the first side, until the underside is darkened and crispy.
- Flip the shrimp and cook for another 1-2 minutes on the second side, until they are opaque and fully cooked. Shrimp cook quickly, so be careful not to overcook them.
- Remove the shrimp from the pan and transfer them to a plate.
Step 5: Garnish and Serve
- Garnish the blackened shrimp with freshly chopped parsley and serve with lemon wedges for a burst of brightness.
- Serve immediately, while the shrimp are hot and juicy.
