For the Filling:
- 6 large eggs
- 1 tablespoon milk
- 1 cup shredded cheddar cheese (or your preferred cheese)
- ½ cup cream cheese, softened
- 1 tablespoon butter
- 2 tablespoons chopped green onions (optional)

For the Wrapping:
- 12 egg roll wrappers
- 1 tablespoon all-purpose flour
- 2 tablespoons water
For Frying:
- Vegetable oil or canola oil (enough for deep frying)

Instructions
Step 1: Prepare the Egg and Cheese Filling
- Crack the eggs into a mixing bowl. Add milk, salt, and pepper, then whisk until well combined.
- Heat butter in a nonstick skillet over medium heat. Pour in the egg mixture and scramble until just set. Avoid overcooking; the eggs should be soft and slightly moist.
- Remove the skillet from the heat and stir in the shredded cheddar cheese, cream cheese, and green onions (if using). Mix until the cheeses are melted and the filling is creamy. Allow the mixture to cool slightly.
Step 2: Assemble the Egg Rolls
- Mix the all-purpose flour and water in a small bowl to create a paste. This will act as glue to seal the wrappers.
- Lay an egg roll wrapper on a clean, flat surface in a diamond shape (point facing you).
- Place 2–3 tablespoons of the egg and cheese filling near the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides tightly. Roll upward, tucking in the filling as you go. Brush the top corner with the flour paste and seal. Repeat with the remaining wrappers and filling.
Step 3: Fry the Egg Rolls
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Carefully place a few egg rolls in the hot oil, making sure not to overcrowd the pan. Fry for 2–3 minutes on each side or until golden brown and crispy.
- Remove the rolls using a slotted spoon and drain them on a plate lined with paper towels.
Step 4: Serve and Enjoy
- Serve the egg rolls warm with your choice of dipping sauces like ranch dressing, salsa, or marinara. Enjoy the crispy, cheesy goodness!
