  • 2 large eggs, beaten

For Dipping Sauce (Optional):

  • 1/2 cup marinara sauce
  • 1/4 cup ranch dressing
  • 1/4 cup spicy aioli

Instructions

Step 1: Prepare the Zucchini

  1. Wash the zucchini thoroughly and pat them dry with a clean towel. Trim off the ends.
  2. Cut each zucchini in half lengthwise, then cut each half into quarters lengthwise to create fries. For thinner fries, you can cut the quarters in half again. Aim for uniform sizes to ensure even cooking.

Step 2: Preheat the Oven or Air Fryer

  1. For Oven-Baking: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. For Air Frying: Preheat your air fryer to 400°F (200°C) for 5 minutes.

Step 3: Prepare the Coating Station

  1. Set up three bowls:
    • Bowl 1: Add the beaten eggs.
    • Bowl 2: Combine the Parmesan cheese, panko breadcrumbs, garlic powder, smoked paprika (if using), Italian seasoning, salt, and black pepper. Mix well.
    • Bowl 3: Leave empty to hold the coated zucchini fries.
  2. Working one at a time, dip each zucchini stick into the egg mixture, letting any excess drip off. Then roll it in the breadcrumb mixture, pressing gently to ensure the coating sticks. Place the coated zucchini fries in Bowl 3 or directly onto your prepared baking sheet or air fryer basket.

Step 4: Bake or Air Fry the Zucchini Fries

  1. For Oven-Baking:
    • Arrange the zucchini fries in a single layer on the prepared baking sheet, leaving a little space between each fry for even cooking.
    • Bake for 15–18 minutes, flipping halfway through, until the fries are golden brown and crispy.
  2. For Air Frying:
    • Place the zucchini fries in the air fryer basket in a single layer, leaving space between them. You may need to cook in batches.
    • Air fry for 12–15 minutes, shaking the basket halfway through, until the fries are crispy and golden.

Step 5: Serve and Garnish

  1. Remove the zucchini fries from the oven or air fryer and let them cool slightly.
  2. Garnish with extra Parmesan cheese or fresh parsley if desired.
  3. Serve immediately with your choice of dipping sauce, such as marinara, ranch, or spicy aioli.
