For the orzo and sauce:

  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 cup orzo pasta
  • ½ cup dry white wine (optional; substitute with chicken or vegetable broth)
  • 2 ½ cups chicken or vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tbsp)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Optional garnishes:

  • Extra Parmesan cheese for serving
  • Lemon wedges

Instructions

Step 1: Prep the Shrimp

  1. Rinse the shrimp under cold water and pat them dry with paper towels.
  2. Season the shrimp with salt, black pepper, and red pepper flakes (if using). Set aside while you prepare the other ingredients.

Step 2: Sear the Shrimp

  1. Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium heat.
  2. Add the shrimp to the pan in a single layer and cook for 1-2 minutes per side, or until they turn pink and are slightly golden. Be careful not to overcook. Remove the shrimp from the pan and set aside on a plate.

Step 3: Sauté the Garlic and Toast the Orzo

  1. In the same pan, add the remaining tablespoon of olive oil and 1 tablespoon of butter.
  2. Add the minced garlic and sauté for 1 minute, or until fragrant.
  3. Stir in the orzo pasta and toast it for 2-3 minutes, stirring frequently, until it turns golden brown. This step enhances the nutty flavor of the orzo.

Step 4: Deglaze the Pan and Cook the Orzo

  1. Pour in the white wine (or broth, if substituting), scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes to reduce slightly.
  2. Add the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer, stirring occasionally, for 8-10 minutes, or until the orzo is tender and most of the liquid is absorbed.

Step 5: Add the Shrimp and Finish the Dish

  1. Stir the lemon zest, lemon juice, and remaining 2 tablespoons of butter into the orzo.
  2. Return the cooked shrimp to the pan and toss to combine. Let everything heat through for 1-2 minutes.
  3. Stir in the Parmesan cheese and sprinkle with fresh parsley. Adjust seasoning with additional salt and pepper, if needed.

Step 6: Garnish and Serve

  1. Serve the shrimp scampi with extra Parmesan cheese and lemon wedges on the side. Enjoy it straight from the skillet or plate it for an elegant presentation.
