For the shrimp:
- 1 lb large shrimp, peeled and deveined (tails on or off, as preferred)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional, for heat)
For the orzo and sauce:
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 cup orzo pasta
- ½ cup dry white wine (optional; substitute with chicken or vegetable broth)
- 2 ½ cups chicken or vegetable broth
- Zest of 1 lemon
- Juice of 1 lemon (about 2–3 tbsp)
- ¼ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Optional garnishes:
- Extra Parmesan cheese for serving
- Lemon wedges
Instructions
Step 1: Prep the Shrimp
- Rinse the shrimp under cold water and pat them dry with paper towels.
- Season the shrimp with salt, black pepper, and red pepper flakes (if using). Set aside while you prepare the other ingredients.
Step 2: Sear the Shrimp
- Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium heat.
- Add the shrimp to the pan in a single layer and cook for 1-2 minutes per side, or until they turn pink and are slightly golden. Be careful not to overcook. Remove the shrimp from the pan and set aside on a plate.
Step 3: Sauté the Garlic and Toast the Orzo
- In the same pan, add the remaining tablespoon of olive oil and 1 tablespoon of butter.
- Add the minced garlic and sauté for 1 minute, or until fragrant.
- Stir in the orzo pasta and toast it for 2-3 minutes, stirring frequently, until it turns golden brown. This step enhances the nutty flavor of the orzo.
Step 4: Deglaze the Pan and Cook the Orzo
- Pour in the white wine (or broth, if substituting), scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes to reduce slightly.
- Add the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer, stirring occasionally, for 8-10 minutes, or until the orzo is tender and most of the liquid is absorbed.
Step 5: Add the Shrimp and Finish the Dish
- Stir the lemon zest, lemon juice, and remaining 2 tablespoons of butter into the orzo.
- Return the cooked shrimp to the pan and toss to combine. Let everything heat through for 1-2 minutes.
- Stir in the Parmesan cheese and sprinkle with fresh parsley. Adjust seasoning with additional salt and pepper, if needed.
Step 6: Garnish and Serve
- Serve the shrimp scampi with extra Parmesan cheese and lemon wedges on the side. Enjoy it straight from the skillet or plate it for an elegant presentation.
