Magic Lemon Cobbler

  • Author: Sophia
  • Total Time: 55–65 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

For the Lemon Layer:

  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • 1/2 cup granulated sugar

For the Topping (Optional):

  • Powdered sugar, for dusting
  • Fresh mint leaves, for garnish

For Serving (Optional):

  • Vanilla ice cream
  • Whipped cream

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Place a 9×13-inch baking dish inside the oven while it preheats. This helps ensure the melted butter stays warm when you add the batter.

Step 2: Prepare the Batter

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Slowly stir in the milk until the batter is smooth. Set aside while preparing the lemon layer.

Step 3: Melt the Butter

Carefully remove the preheated baking dish from the oven and pour the melted butter into the dish, ensuring it coats the bottom evenly. Do not mix the butter with the batter—this is essential for creating the cobbler’s magic layers.

Step 4: Add the Batter

Pour the batter gently over the melted butter in the baking dish. Do not stir. The batter will float above the butter as it bakes, creating the cobbler’s soft, cake-like layer.

Step 5: Prepare the Lemon Layer

In a small bowl, mix the fresh lemon juice, lemon zest, and granulated sugar until combined. Drizzle this lemon mixture evenly over the batter in the baking dish. Avoid stirring—this is crucial for forming the lemon filling layer.

Step 6: Bake the Cobbler

Place the baking dish in the preheated oven and bake for 40–50 minutes, or until the top is golden brown and a toothpick inserted into the cake layer comes out clean. The cobbler will separate into a fluffy top layer and a gooey lemon filling underneath as it bakes.

Step 7: Cool and Serve

Allow the cobbler to cool for 10–15 minutes before serving. Dust the top with powdered sugar for an elegant finish. Serve warm with vanilla ice cream or whipped cream for an indulgent treat.
