For the Fire Chicken:
- 1 pound (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil (for cooking)
For the Sauce:
- 2 tablespoons gochujang (Korean fermented chili paste)
- 1 tablespoon gochugaru (Korean chili flakes)
- 2 tablespoons soy sauce
- 2 tablespoons honey (or sugar)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- ½ teaspoon ground black pepper
For the Cheese Topping:
- 1 ½ cups shredded mozzarella cheese (or a mix of mozzarella and cheddar for extra flavor)
Optional Garnishes:
- 1 green onion, finely chopped
- 1 teaspoon sesame seeds
- Red chili flakes (for extra heat)
Instructions
Step 1: Prepare the Sauce
- In a small mixing bowl, whisk together the gochujang, gochugaru, soy sauce, honey, sesame oil, rice vinegar, minced garlic, grated ginger, and ground black pepper. Taste the sauce and adjust the sweetness or spice to your preference. Set aside.
Step 2: Cook the Chicken
- Heat 1 tablespoon of vegetable oil in a large skillet or frying pan over medium-high heat.
- Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Pour the prepared sauce over the chicken, stirring to coat each piece evenly. Reduce the heat to medium and simmer for 3-5 minutes, allowing the sauce to thicken and glaze the chicken.
Step 3: Assemble the Cheese Buldak
- Preheat your oven’s broiler on high.
- Transfer the cooked chicken and sauce to an oven-safe dish or keep it in the skillet if it’s oven-safe. Spread the chicken evenly across the bottom.
- Sprinkle the shredded mozzarella cheese generously over the top, covering the chicken completely.
Step 4: Melt the Cheese
- Place the dish under the broiler for 3-5 minutes, or until the cheese is melted, bubbly, and slightly golden. Keep a close eye to prevent burning.
- Alternatively, if you don’t have a broiler, cover the skillet with a lid and cook on low heat for 5-7 minutes until the cheese melts.
Step 5: Garnish and Serve
- Remove the Cheese Buldak from the oven and let it cool slightly.
- Garnish with chopped green onions, sesame seeds, and extra chili flakes if desired.
- Serve hot with steamed rice, lettuce wraps, or on its own as a main dish or appetizer.
