For the Chicken Paprikash
- 2 tbsp olive oil or sunflower oil
- 2 lbs chicken thighs (skin-on and bone-in) or drumsticks
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 medium red bell pepper, sliced
- 2 tbsp sweet Hungarian paprika (or smoked paprika, if desired)
- 2 tbsp all-purpose flour
- 1 ½ cups low-sodium chicken broth
- 1 cup diced tomatoes (canned or fresh)
- ½ cup sour cream (or plain yogurt)
- Salt and pepper to taste
Optional Garnishes
- Fresh parsley, chopped
- A dollop of sour cream
For Serving
- Egg noodles, dumplings, or rice
Instructions
- Step 1: Prepare the Chicken
- Pat the chicken pieces dry with paper towels and season with salt and pepper.
- Step 2: Sear the Chicken
- Heat oil in a large skillet or Dutch oven over medium-high heat.
- Add the chicken pieces skin-side down and cook for 4-5 minutes per side until golden brown. Remove and set aside.
- Step 3: Sauté the Aromatics
- In the same pan, reduce heat to medium and add the diced onion, garlic, and bell pepper.
- Sauté for 5-7 minutes until softened and fragrant.
- Step 4: Add Paprika and Flour
- Stir in the paprika and flour, coating the vegetables evenly. Cook for 1-2 minutes to toast the paprika.
- Step 5: Deglaze the Pan
- Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits from the bottom.
- Step 6: Add Tomatoes and Chicken
- Stir in the diced tomatoes, then return the chicken to the pan.
- Cover and simmer on low heat for 35-40 minutes, stirring occasionally, until the chicken is tender and cooked through.
- Step 7: Incorporate Sour Cream
- Remove the chicken pieces and set aside.
- Whisk the sour cream into the sauce until smooth. Simmer for 2-3 minutes to thicken.
- Step 8: Serve and Garnish
- Return the chicken to the pan, spooning the sauce over the top. Garnish with fresh parsley and a dollop of sour cream.
- Serve hot with your choice of egg noodles, dumplings, or rice.
