  • 2 tbsp sweet Hungarian paprika (or smoked paprika, if desired)
  • 2 tbsp all-purpose flour
  • 1 ½ cups low-sodium chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • ½ cup sour cream (or plain yogurt)
  • Salt and pepper to taste

Optional Garnishes

  • Fresh parsley, chopped
  • A dollop of sour cream

For Serving

  • Egg noodles, dumplings, or rice

Instructions

  • Step 1: Prepare the Chicken
    • Pat the chicken pieces dry with paper towels and season with salt and pepper.
  • Step 2: Sear the Chicken
    • Heat oil in a large skillet or Dutch oven over medium-high heat.
    • Add the chicken pieces skin-side down and cook for 4-5 minutes per side until golden brown. Remove and set aside.
  • Step 3: Sauté the Aromatics
    • In the same pan, reduce heat to medium and add the diced onion, garlic, and bell pepper.
    • Sauté for 5-7 minutes until softened and fragrant.
  • Step 4: Add Paprika and Flour
    • Stir in the paprika and flour, coating the vegetables evenly. Cook for 1-2 minutes to toast the paprika.
  • Step 5: Deglaze the Pan
    • Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits from the bottom.
  • Step 6: Add Tomatoes and Chicken
    • Stir in the diced tomatoes, then return the chicken to the pan.
    • Cover and simmer on low heat for 35-40 minutes, stirring occasionally, until the chicken is tender and cooked through.
  • Step 7: Incorporate Sour Cream
    • Remove the chicken pieces and set aside.
    • Whisk the sour cream into the sauce until smooth. Simmer for 2-3 minutes to thicken.
  • Step 8: Serve and Garnish
    • Return the chicken to the pan, spooning the sauce over the top. Garnish with fresh parsley and a dollop of sour cream.
    • Serve hot with your choice of egg noodles, dumplings, or rice.
