For the Salad:
- 2 boneless, skinless chicken breasts
- 6 slices of turkey or beef bacon
- 1 large avocado, sliced
- 4 cups mixed greens (spinach, arugula, romaine, or a mix)
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- ½ cup shredded carrots
- ½ cup shredded cheese (cheddar, feta, or parmesan)
For the Honey Mustard Dressing:
- ¼ cup Dijon mustard
- 2 tbsp honey
- 2 tbsp apple cider vinegar
- ¼ cup olive oil
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper
For the Chicken Marinade (Optional but Recommended):
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Instructions
Step 1: Marinate and Cook the Chicken
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
- Coat the chicken breasts evenly with the marinade and let them sit for at least 10 minutes (or up to 1 hour for extra flavor).
- Heat a grill pan or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through.
- Remove from heat and let it rest for 5 minutes before slicing.
Step 2: Cook the Bacon
- In the same pan, cook the bacon over medium heat until crispy, about 3-4 minutes per side.
- Transfer to a paper towel-lined plate to drain excess grease, then crumble into bite-sized pieces.
Step 3: Prepare the Dressing
- In a bowl or jar, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, garlic, salt, and black pepper.
- Taste and adjust seasoning if needed. Set aside.
Step 4: Assemble the Salad
- Arrange the mixed greens in a large serving bowl.
- Top with sliced grilled chicken, crumbled bacon, avocado slices, cherry tomatoes, red onion, shredded carrots, and shredded cheese.
- Drizzle with the homemade honey mustard dressing.
- Toss gently to combine and serve immediately!
