For the Honey Mustard Dressing:

  • ¼ cup Dijon mustard
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper

For the Chicken Marinade (Optional but Recommended):

  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Step 1: Marinate and Cook the Chicken

  1. In a small bowl, whisk together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Coat the chicken breasts evenly with the marinade and let them sit for at least 10 minutes (or up to 1 hour for extra flavor).
  3. Heat a grill pan or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through.
  4. Remove from heat and let it rest for 5 minutes before slicing.

Step 2: Cook the Bacon

  1. In the same pan, cook the bacon over medium heat until crispy, about 3-4 minutes per side.
  2. Transfer to a paper towel-lined plate to drain excess grease, then crumble into bite-sized pieces.

Step 3: Prepare the Dressing

  1. In a bowl or jar, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, garlic, salt, and black pepper.
  2. Taste and adjust seasoning if needed. Set aside.

Step 4: Assemble the Salad

  1. Arrange the mixed greens in a large serving bowl.
  2. Top with sliced grilled chicken, crumbled bacon, avocado slices, cherry tomatoes, red onion, shredded carrots, and shredded cheese.
  3. Drizzle with the homemade honey mustard dressing.
  4. Toss gently to combine and serve immediately!
