  • Author: Sophia
  • Total Time: 1 hour 50 minutes
  • Yield: 12 servings 1x

Ingredients

Scale

For the Cake

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves (optional)
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup honey
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice (freshly squeezed, if possible)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup brewed coffee or black tea, cooled

Optional Toppings

  • Powdered sugar for dusting
  • Honey glaze (recipe below)
  • Chopped nuts (e.g., almonds or walnuts)
  • Fresh fruit

For the Honey Glaze (Optional)

  • 1 cup powdered sugar
  • 23 tablespoons honey
  • 12 tablespoons milk or orange juice

Instructions

Step 1: Prepare the Equipment

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch pan, Bundt pan, or two 8-inch round pans. Alternatively, line the pans with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves (if using). Set aside.

Step 3: Combine the Wet Ingredients

  1. In another large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar until smooth.
  2. Add the honey, vegetable oil, orange juice, vanilla extract, and coffee (or tea). Mix until fully combined.

Step 4: Combine the Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula or whisk. Mix until just combined—do not overmix, as this can result in a dense cake.

Step 5: Pour the Batter into the Pan

  1. Pour the batter evenly into the prepared pan(s). Tap the pan gently on the counter to release any air bubbles.

Step 6: Bake the Cake

  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. If using multiple pans, check for doneness around the 45-minute mark.

Step 7: Cool and Decorate

  1. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
  2. Once cooled, dust the cake with powdered sugar, drizzle with honey glaze, or top with chopped nuts as desired.
