- 2 cups (200g) rolled oats
- 1/2 cup (100g) unsalted butter
- 1/2 cup (125g) golden syrup
- 1/3 cup (75g) light brown sugar
Optional Add-Ins
- 1/4 cup (40g) raisins or dried cranberries
- 1/4 cup (30g) chopped almonds or walnuts
- 1/4 cup (40g) chocolate chips
- 2 tablespoons sunflower or pumpkin seeds
Instructions
Step 1: Preheat the Oven and Prepare the Pan
- Preheat your oven to 350°F (180°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: Melt the Wet Ingredients
- In a medium saucepan, combine the butter, golden syrup, and light brown sugar. Heat over low to medium heat, stirring occasionally, until the butter has melted and the sugar has dissolved completely. Remove from heat.
Step 3: Mix in the Oats
- Add the rolled oats to the saucepan, stirring until they are evenly coated in the syrup mixture. If you’re adding dried fruit, nuts, seeds, or chocolate chips, fold them in at this stage.
Step 4: Bake the Flapjacks
- Transfer the oat mixture to the prepared baking dish, pressing it down firmly and evenly with the back of a spoon or spatula.
- Bake in the preheated oven for 18-20 minutes, or until the edges turn golden brown. The center will still be soft but will firm up as it cools.
Step 5: Cool and Slice
- Remove the flapjacks from the oven and let them cool in the pan for 10 minutes. Use the parchment paper overhang to lift them out of the pan and transfer to a wire rack to cool completely, about 20 minutes.
- Once cooled, slice the flapjacks into 12 bars or squares. Serve and enjoy!
