1 tablespoon olive oil
1/2 pound ground beef or ground chicken
1/2 pound ground turkey or sausage (halal-certified)
1 medium onion, finely chopped
1 green bell pepper, finely chopped
2 celery stalks, finely chopped
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon black pepper
Salt to taste
1/4 cup chopped parsley (for garnish)
1/4 cup green onions, thinly sliced


Instructions

Step 1: Cook the Rice

Rinse the rice under cold water until the water runs clear. This step removes excess starch, ensuring fluffy rice. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, reduce the heat to low, and cover. Cook for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat, fluff with a fork, and set aside.

Step 2: Brown the Meat

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the ground beef and ground turkey (or sausage) and cook until browned, breaking it up with a wooden spoon. This should take about 5-7 minutes. Drain any excess fat and set the meat aside on a plate.

Step 3: Sauté the Vegetables

In the same skillet, add the onion, bell pepper, and celery. Cook over medium heat for 5-7 minutes, stirring occasionally, until the vegetables are softened and aromatic. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Step 4: Season and Combine

Return the cooked meat to the skillet with the sautéed vegetables. Sprinkle in the smoked paprika, cayenne pepper, thyme, oregano, black pepper, and salt. Stir to coat the meat and vegetables evenly with the spices. Cook for 2-3 minutes, allowing the flavors to meld.

Step 5: Add the Rice

Gently fold the cooked rice into the skillet mixture, ensuring all ingredients are evenly distributed. Lower the heat and let the mixture cook for another 5 minutes, stirring occasionally, to allow the rice to absorb the flavors.

Step 6: Garnish and Serve

Remove the skillet from heat and sprinkle the Dirty Rice with chopped parsley and green onions for a burst of freshness and color. Serve warm, with hot sauce on the side for those who enjoy extra spice.
