For the Deviled Eggs:
- 12 large eggs, hard-boiled and peeled
- 2 ripe avocados
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
For the Decorations:
- 1 small red bell pepper, diced into tiny squares (for “ornaments”)
- Shredded Parmesan cheese or coconut flakes (for “snow”)
- Small star-shaped pieces of yellow bell pepper (for tree toppers)
- Fresh herbs (parsley or cilantro) for additional greenery (optional)
Instructions
Step 1: Prepare the Hard-Boiled Eggs
- Place the eggs in a large pot and cover them with cold water. Bring the water to a boil over medium-high heat, then turn off the heat, cover, and let the eggs sit for 10–12 minutes.
- Transfer the eggs to an ice bath to cool for 5 minutes before peeling. Carefully peel the eggs under running water to remove the shells cleanly.
Step 2: Slice and Remove Yolks
- Slice each hard-boiled egg in half lengthwise.
- Gently scoop out the yolks and place them in a mixing bowl. Arrange the egg white halves on a serving platter.
Step 3: Make the Filling
- Mash the egg yolks and avocados in the mixing bowl until smooth and creamy.
- Add the mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and black pepper. Mix until fully combined. Adjust the seasoning to taste.
Step 4: Pipe the Christmas Tree Filling
- Transfer the avocado yolk mixture to a piping bag fitted with a star or round tip.
- Pipe the mixture onto each egg white half, starting with a wide base and swirling upwards to form a tree shape.
Step 5: Decorate the Christmas Trees
- Sprinkle shredded Parmesan cheese or coconut flakes over the “trees” to resemble snow.
- Place tiny red bell pepper squares onto the filling to mimic ornaments.
- Add a small yellow bell pepper star to the top of each tree for the finishing touch.
- If desired, garnish the platter with fresh herbs for an extra festive look.
