  • 1 red bell pepper, diced

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 can (15 oz) white beans or kidney beans, drained and rinsed
  • 1 teaspoon chili flakes (optional, for spice)

Instructions

Step 1: Brown the Sausages

To enhance the flavor of your casserole, start by browning the sausages in a pan. Heat 1 tablespoon of olive oil over medium heat and add the sausages. Cook them for about 5 minutes, turning occasionally, until they develop a nice golden-brown crust. This step helps lock in flavor and prevents the sausages from becoming too soft in the crockpot. Once browned, set them aside.

Step 2: Sauté the Onions and Garlic

Using the same pan, add the diced onions and sauté for 2-3 minutes until they turn translucent. Stir in the minced garlic and cook for another minute until fragrant. These aromatics will add depth to the casserole, making it extra delicious.

Step 3: Prepare the Vegetables

While the onions and garlic are cooking, chop your carrots, potatoes, and bell peppers. Cutting them into even pieces ensures they cook uniformly in the slow cooker.

Step 4: Layer the Ingredients in the Crockpot

In your crockpot, start by adding the diced tomatoes and tomato paste, then pour in the beef or chicken broth. Stir everything together to create a flavorful base. Next, add the carrots, potatoes, and bell peppers. Sprinkle in the smoked paprika, oregano, thyme, black pepper, and salt. Give everything a good stir to distribute the seasoning.

Step 5: Add the Sausages and Beans

Place the browned sausages on top of the vegetables and pour in Worcestershire sauce for an added layer of umami flavor. If you’re using beans, add them in at this stage. They will absorb the rich flavors of the sauce while also adding extra protein and fiber to the dish.

Step 6: Set It and Forget It

Cover the crockpot with the lid and set it to low heat for 6-8 hours or high heat for 3-4 hours. The slow cooking process allows all the flavors to meld together, creating a rich and hearty casserole. About 30 minutes before the cooking time is up, taste the sauce and adjust seasoning if needed. If you prefer a thicker sauce, remove the lid for the last 30 minutes to let some of the liquid evaporate.
