Crockpot Pierogi Casserole with Kielbasa

  • Author: Sophia
  • Total Time: 4 hours 10 minutes – 6 hours 10 minutes
  • Yield: Serves 6-8 1x

Ingredients

Scale
  • 1 (16 oz) package frozen potato and cheese pierogi
  • 1 lb kielbasa, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups chicken or vegetable broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon butter
  • ½ cup chopped green onions (for garnish)

Instructions

Step 1: Sauté the Kielbasa and Onions

While this is a crockpot recipe, taking a few extra minutes to brown the kielbasa and onions will elevate the flavor. Heat a skillet over medium heat, add 1 tablespoon of butter, and sauté the sliced kielbasa until browned (about 3-4 minutes). Remove the kielbasa and set it aside. In the same skillet, cook the diced onions until they are translucent, then add the minced garlic and cook for another minute.

Step 2: Prepare the Creamy Sauce

In a medium bowl, whisk together sour cream, cream cheese, broth, Worcestershire sauce, smoked paprika, black pepper, and salt. This will form the deliciously creamy sauce that ties the entire dish together.

Step 3: Assemble in the Crockpot

In your slow cooker, layer half of the frozen pierogi at the bottom. Add half of the cooked kielbasa and onions. Pour half of the creamy sauce over the top. Repeat with another layer of pierogi, kielbasa, and the remaining sauce. Sprinkle the shredded cheddar cheese on top.

Step 4: Cook on Low

Cover the slow cooker and cook on low for 4-6 hours. This slow cooking process allows the flavors to blend beautifully, and the pierogi will absorb the rich, cheesy sauce.

Step 5: Garnish and Serve

Once cooked, stir gently to combine everything. Sprinkle chopped green onions on top for a fresh burst of flavor. Serve hot and enjoy!
