For the Garlic Parmesan Sauce:

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). This ensures an even, golden finish for the chicken and potatoes.

Step 2: Season the Chicken

In a small bowl, mix the paprika, garlic powder, Italian seasoning, salt, and black pepper. Rub the seasoning mixture all over the chicken thighs, making sure to coat both the skin and underside.

Step 3: Prepare the Potatoes

In a medium bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Ensure the potatoes are evenly coated with the seasonings.

Step 4: Sear the Chicken

Heat a large, oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet and cook for 4–5 minutes, or until the skin is golden and crispy. Flip the chicken and cook for an additional 3 minutes. Remove the chicken from the skillet and set it aside.

Step 5: Cook the Potatoes

Add the seasoned potatoes to the skillet, cut side down. Cook for 5–6 minutes, stirring occasionally, until they are golden and slightly tender. Push the potatoes to the edges of the skillet to make room for the chicken.

Step 6: Combine Chicken and Potatoes

Nestle the seared chicken thighs among the potatoes in the skillet. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.

Step 7: Make the Garlic Parmesan Sauce

While the chicken and potatoes are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1–2 minutes, stirring constantly, until fragrant. Stir in the parmesan cheese, heavy cream, and crushed red pepper flakes (if using). Cook for another 2–3 minutes, or until the sauce is smooth and slightly thickened.

Step 8: Finish the Dish

Remove the skillet from the oven and drizzle the garlic parmesan sauce over the chicken and potatoes. Garnish with freshly chopped parsley for a burst of color and flavor.
