			For the Wings:
- 2 lbs (900g) chicken wings, drumettes and flats separated
 - 1 tbsp baking powder (not baking soda)
 - 1/2 tsp salt
 - 1/2 tsp black pepper

For the Dry Rub:
- 1 tbsp smoked paprika
 - 1 tsp garlic powder
 - 1 tsp onion powder
 - 1 tsp chili powder
 - 1 tsp ground cumin
 - 1/2 tsp cayenne pepper (optional, for heat)
 - 1/2 tsp dried oregano
 - 1 tbsp brown sugar (optional, for a touch of sweetness)

Instructions
Step 1: Prepare the Wings
- Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. Lightly grease the rack with cooking spray to prevent sticking.
 - Pat the chicken wings dry with paper towels. This step is crucial for achieving crispy skin.
 - In a large mixing bowl, combine the baking powder, salt, and black pepper. Add the wings and toss until evenly coated.

Step 2: Apply the Dry Rub
- In a small bowl, mix all the dry rub ingredients until well combined.
 - Sprinkle the dry rub mixture over the wings, tossing to ensure each wing is evenly coated.

Step 3: Bake the Wings
- Arrange the wings in a single layer on the prepared wire rack, ensuring they are not touching for even cooking.
 - Bake in the preheated oven for 25 minutes. Flip the wings and bake for another 20–25 minutes, or until they are golden brown and crispy.

Step 4: Serve and Enjoy
- Remove the wings from the oven and let them rest for 5 minutes.
 - Serve hot with your favorite dipping sauces, such as ranch, blue cheese, or honey mustard.
