For the dough:
- 2 ½ cups all-purpose flour (plus extra for dusting)
- 1 tsp sugar
- 1 tsp salt
- 2 ¼ tsp (1 packet) instant yeast
- 1 cup warm water (110°F)
- 2 tbsp olive oil
For the filling:
- 2 cups cooked chicken breast, shredded or diced
- 4 slices cooked bacon, crumbled (or turkey bacon)
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- ½ cup Caesar dressing (or ranch, as an alternative)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
For assembly:
- 1 egg, beaten (for egg wash)
- 2 tbsp grated Parmesan cheese (for garnish)
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine the flour, sugar, salt, and yeast.
- Add the warm water and olive oil to the dry ingredients. Mix until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. If the dough feels too sticky, add a tablespoon of flour at a time.
- Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise for 1 hour or until it doubles in size.
Step 2: Cook and Shred the Chicken
- If using raw chicken, season it lightly with salt and pepper and cook in a skillet over medium heat until fully cooked, about 6-8 minutes per side.
- Once cooled, shred or dice the chicken into small pieces.
Step 3: Cook the Bacon
- Cook bacon in a skillet over medium heat until crispy.
- Transfer to a paper towel-lined plate to remove excess grease. Crumble the bacon into small bits once cooled.
Step 4: Make the Filling
- In a large mixing bowl, combine the shredded chicken, crumbled bacon, mozzarella cheese, Parmesan cheese, Caesar dressing, garlic powder, and Italian seasoning. Stir until evenly mixed.
Step 5: Assemble the Chicken Bakes
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into four equal portions. Roll each portion into a rectangle about 8×6 inches.
- Place a generous scoop of filling in the center of each rectangle, leaving a 1-inch border around the edges.
- Fold the edges of the dough over the filling, sealing tightly to form a log shape. Pinch the seams and place the seam-side down on the baking sheet.
- Brush each chicken bake with beaten egg and sprinkle with grated Parmesan cheese.
Step 6: Bake to Perfection
- Bake the chicken bakes in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy.
- Allow them to cool slightly before serving.
