  • Author: Sophia
  • Total Time: 20 minutes
  • Yield: 4 sandwiches 1x

Ingredients

Scale

For the Sandwich

  • 8 slices rye bread
  • 1 lb sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained well
  • 4 tbsp unsalted butter, softened

For the Russian Dressing

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp prepared horseradish
  • 1 tsp Worcestershire sauce
  • ½ tsp smoked paprika
  • 1 tsp Dijon mustard
  • 1 tbsp sweet pickle relish
  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the Russian Dressing

  1. Combine Ingredients: In a small bowl, mix mayonnaise, ketchup, horseradish, Worcestershire sauce, smoked paprika, Dijon mustard, and pickle relish.
  2. Season to Taste: Add salt and black pepper, then stir until smooth and well combined.
  3. Chill: Cover and refrigerate until ready to use. This can be made up to 3 days in advance.

Step 2: Assemble the Sandwiches

  1. Spread the Dressing: Spread a generous layer of Russian dressing on one side of each slice of bread.
  2. Layer the Ingredients:
    • Place a slice of Swiss cheese on four of the bread slices (dressing side up).
    • Add a layer of corned beef on top of the cheese.
    • Spread a layer of drained sauerkraut over the corned beef.
    • Top with another slice of Swiss cheese, then place the remaining bread slices on top, dressing side down.

Step 3: Grill the Sandwiches

  1. Heat the Skillet: Preheat a large skillet or griddle over medium heat.
  2. Butter the Bread: Spread softened butter evenly over the outer sides of each sandwich.
  3. Cook: Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula to encourage even browning and melting.
  4. Check for Doneness: The bread should be golden brown, and the cheese should be fully melted. Adjust heat if necessary to avoid burning.

Step 4: Serve

  1. Slice and Serve: Cut each sandwich in half and serve warm.
  2. Optional Sides: Pair with dill pickles, potato chips, coleslaw, or a bowl of hot soup for a complete meal.
