For the Sandwich
- 8 slices rye bread
- 1 lb sliced corned beef
- 8 slices Swiss cheese
- 1 cup sauerkraut, drained well
- 4 tbsp unsalted butter, softened
For the Russian Dressing
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp prepared horseradish
- 1 tsp Worcestershire sauce
- ½ tsp smoked paprika
- 1 tsp Dijon mustard
- 1 tbsp sweet pickle relish
- Salt and black pepper, to taste
Instructions
Step 1: Prepare the Russian Dressing
- Combine Ingredients: In a small bowl, mix mayonnaise, ketchup, horseradish, Worcestershire sauce, smoked paprika, Dijon mustard, and pickle relish.
- Season to Taste: Add salt and black pepper, then stir until smooth and well combined.
- Chill: Cover and refrigerate until ready to use. This can be made up to 3 days in advance.
Step 2: Assemble the Sandwiches
- Spread the Dressing: Spread a generous layer of Russian dressing on one side of each slice of bread.
- Layer the Ingredients:
- Place a slice of Swiss cheese on four of the bread slices (dressing side up).
- Add a layer of corned beef on top of the cheese.
- Spread a layer of drained sauerkraut over the corned beef.
- Top with another slice of Swiss cheese, then place the remaining bread slices on top, dressing side down.
Step 3: Grill the Sandwiches
- Heat the Skillet: Preheat a large skillet or griddle over medium heat.
- Butter the Bread: Spread softened butter evenly over the outer sides of each sandwich.
- Cook: Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula to encourage even browning and melting.
- Check for Doneness: The bread should be golden brown, and the cheese should be fully melted. Adjust heat if necessary to avoid burning.
Step 4: Serve
- Slice and Serve: Cut each sandwich in half and serve warm.
- Optional Sides: Pair with dill pickles, potato chips, coleslaw, or a bowl of hot soup for a complete meal.
