Instructions
Prepare the Chicken:
- Flatten the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet. This ensures even cooking.
- Mix the Seasoning: In a small bowl, combine garlic powder, onion powder, paprika, cayenne pepper, dried thyme, salt, and black pepper.
- Season the Chicken: Rub the spice mixture evenly over both sides of the chicken breasts.
Cook the Chicken:
- Heat the Oil: In a large skillet, heat the olive oil or butter over medium heat.
- Sear the Chicken: Add the chicken breasts to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
Make the Cream Sauce:
- Melt the Butter: In the same skillet, melt the butter over medium heat, scraping up any browned bits from the bottom of the pan for added flavor.
- Add the Cream and Broth: Stir in the heavy cream and chicken broth, whisking to combine.
- Season the Sauce: Add garlic powder, Cajun seasoning, and Parmesan cheese. Simmer for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
Combine and Serve:
- Return the Chicken: Add the cooked chicken back to the skillet, spooning the sauce over the top. Simmer for 2-3 minutes to warm the chicken and allow the flavors to meld.
- Garnish: Sprinkle with chopped parsley and extra Parmesan cheese, if desired.
Serve:
- Plate and Pair: Serve the chicken and sauce over pasta, rice, or mashed potatoes.
