Ingredients
Scale
For the Carne Asada
- 1 pound flank steak or skirt steak
- 2 tablespoons olive oil
- ¼ cup orange juice
- 2 tablespoons lime juice (freshly squeezed)
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
For the Fries
- 1 ½ pounds russet potatoes (about 4 large potatoes) or frozen French fries
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
For the Toppings
- 1 ½ cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
- 1 cup guacamole
- 1 cup pico de gallo or fresh salsa
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
- 1–2 jalapeños, sliced (optional)
- Hot sauce (optional)
Instructions
Step 1: Marinate the Carne Asada
- In a large bowl or resealable plastic bag, combine the olive oil, orange juice, lime juice, garlic, cumin, chili powder, smoked paprika, salt, pepper, and cilantro. Whisk to combine.
- Add the steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
Step 2: Prepare the Fries
- If using fresh potatoes, preheat your oven to 425°F (220°C). Peel (optional) and cut the potatoes into thin strips for fries.
- In a large bowl, toss the potato strips with olive oil, garlic powder, paprika, and salt until evenly coated.
- Spread the potatoes in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Shortcut: Use frozen fries and bake or air-fry according to the package instructions for a quicker option.
Step 3: Cook the Carne Asada
- Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and pat it dry with paper towels to ensure a good sear.
- Grill the steak for 4-6 minutes per side, depending on your desired doneness (4 minutes for medium-rare).
- Remove the steak from the heat and let it rest for 5 minutes before slicing. Slice the steak thinly against the grain into bite-sized pieces.
Step 4: Assemble the Fries
- Arrange the fries on a large oven-safe platter or baking dish. Sprinkle the shredded cheese evenly over the fries.
- Place the fries under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Be careful not to burn the cheese.
Step 5: Add the Toppings
- Top the cheesy fries with the sliced carne asada.
- Add generous dollops of guacamole and sour cream.
- Sprinkle on pico de gallo, chopped cilantro, and sliced jalapeños. Drizzle with hot sauce if desired.
Step 6: Serve and Enjoy
Serve the Carne Asada Fries immediately with lime wedges on the side for a burst of citrusy freshness. This dish is best enjoyed while the fries are still crispy and the cheese is gooey!
