Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
- Reserve 1/4 cup of pasta water, then drain the pasta and set it aside.
Step 2: Season and Sear the Chicken
- Toss the chicken strips with Cajun seasoning, ensuring each piece is well coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
Step 3: Sauté the Vegetables
- In the same skillet, melt the butter over medium heat. Add the onion, red bell pepper, and yellow bell pepper. Sauté for 5-7 minutes, or until the vegetables are soft and slightly caramelized.
- Stir in the minced garlic and cook for another minute, until fragrant.
Step 4: Make the Sauce
- Pour in the chicken broth and scrape the bottom of the skillet to deglaze and incorporate any browned bits.
- Stir in the heavy cream, Parmesan cheese, smoked paprika, and cayenne pepper (if using). Let the sauce simmer gently for 3-5 minutes, until thickened slightly. Taste and adjust seasoning with salt and pepper.
Step 5: Combine Pasta and Chicken
- Add the cooked pasta and reserved chicken to the skillet, tossing to coat everything in the creamy Cajun sauce.
- If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.
Step 6: Serve
- Divide the Cajun Chicken Pasta into bowls. Garnish with chopped parsley, extra Parmesan cheese, and a squeeze of lemon juice for a fresh, zesty finish. Serve hot.
