For the Pasta

  • 12 ounces fettuccine, penne, or your preferred pasta
  • 1/4 cup reserved pasta water (if needed to adjust sauce consistency)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
  2. Reserve 1/4 cup of pasta water, then drain the pasta and set it aside.

Step 2: Season and Sear the Chicken

  1. Toss the chicken strips with Cajun seasoning, ensuring each piece is well coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

Step 3: Sauté the Vegetables

  1. In the same skillet, melt the butter over medium heat. Add the onion, red bell pepper, and yellow bell pepper. Sauté for 5-7 minutes, or until the vegetables are soft and slightly caramelized.
  2. Stir in the minced garlic and cook for another minute, until fragrant.

Step 4: Make the Sauce

  1. Pour in the chicken broth and scrape the bottom of the skillet to deglaze and incorporate any browned bits.
  2. Stir in the heavy cream, Parmesan cheese, smoked paprika, and cayenne pepper (if using). Let the sauce simmer gently for 3-5 minutes, until thickened slightly. Taste and adjust seasoning with salt and pepper.

Step 5: Combine Pasta and Chicken

  1. Add the cooked pasta and reserved chicken to the skillet, tossing to coat everything in the creamy Cajun sauce.
  2. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.

Step 6: Serve

  1. Divide the Cajun Chicken Pasta into bowls. Garnish with chopped parsley, extra Parmesan cheese, and a squeeze of lemon juice for a fresh, zesty finish. Serve hot.
