For the Fritters:
- 3 cups (300g) shredded cabbage
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- ½ cup (60g) all-purpose flour
- ½ cup (60g) chickpea flour (optional for added flavor)
- 2 large eggs
- ¼ cup (60ml) milk or water
- 1 teaspoon baking powder
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons chopped parsley or cilantro
For Frying:
- 3–4 tablespoons vegetable oil
Optional Dipping Sauce:
- ½ cup (120g) Greek yogurt or sour cream
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
Step 1: Prepare the Cabbage
- Wash and finely shred the cabbage using a sharp knife, mandoline, or food processor.
- Place the shredded cabbage in a large mixing bowl and add the chopped onion, minced garlic, and fresh parsley or cilantro.
Step 2: Season the Cabbage
- Sprinkle smoked paprika, cumin, black pepper, and salt over the cabbage mixture. Toss to coat evenly, allowing the spices to permeate the vegetables.
Step 3: Make the Batter
- In a separate bowl, whisk together the eggs and milk (or water).
- Add the all-purpose flour, chickpea flour (if using), and baking powder to the wet mixture. Whisk until smooth and lump-free.
Step 4: Combine the Cabbage and Batter
- Pour the batter over the cabbage mixture. Stir until all the ingredients are well combined and the cabbage is coated with the batter. The mixture should hold together but not be overly wet.
Step 5: Heat the Oil
- Heat vegetable oil in a large non-stick skillet over medium heat. The oil should be hot but not smoking, about 350°F (175°C).
Step 6: Fry the Fritters
- Scoop about 2 tablespoons of the cabbage mixture into the skillet, flattening it slightly to form a fritter.
- Fry for 3–4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining mixture.
Step 7: Prepare the Dipping Sauce
- In a small bowl, mix Greek yogurt or sour cream with lemon juice, garlic powder, smoked paprika, salt, and pepper. Stir until smooth.
Step 8: Serve and Enjoy
- Serve the cabbage fritters warm with the dipping sauce on the side. Garnish with additional parsley or cilantro if desired.
