Baked Eggs with Mushrooms and Cheese

  • Author: Sophia
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Baked Eggs

  • 8 large eggs
  • 2 cups mushrooms, sliced (cremini, button, or shiitake work well)
  • 1 tablespoon olive oil or unsalted butter
  • 1 garlic clove, minced
  • 1/2 cup grated cheese (Gruyère, cheddar, or Parmesan)
  • 1/4 cup heavy cream or whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-Ins and Garnishes

  • 2 tablespoons fresh parsley or chives, chopped
  • A pinch of red pepper flakes or smoked paprika
  • Toasted bread or baguette slices for serving

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C). Lightly grease four ramekins or a small baking dish with olive oil or butter.

Step 2: Sauté the Mushrooms

  1. Heat the olive oil or butter in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, or until they release their moisture and start to brown.
  2. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning. Season with a pinch of salt and pepper, then set aside.

Step 3: Prepare the Ramekins

  1. Divide the sautéed mushrooms evenly among the prepared ramekins, spreading them out to create an even layer at the bottom.

Step 4: Add the Eggs and Cream

  1. Crack two eggs into each ramekin, being careful not to break the yolks.
  2. Drizzle about a tablespoon of heavy cream or milk over the eggs in each ramekin.

Step 5: Top with Cheese and Seasoning

  1. Sprinkle the grated cheese evenly over the eggs, ensuring each ramekin gets a generous amount.
  2. Add a pinch of salt, pepper, and any desired seasonings like red pepper flakes or smoked paprika.

Step 6: Bake the Eggs

  1. Place the ramekins on a baking sheet to catch any drips. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny.
  2. For firmer yolks, bake for an additional 2-3 minutes.

Step 7: Garnish and Serve

  1. Remove the ramekins from the oven and let them cool for 2-3 minutes. Garnish with fresh parsley or chives for a pop of color and flavor.
  2. Serve warm with toasted bread or a simple side salad.
