Step 1: Prepare the Ingredients

  • Wash and peel the apple. Grate it using the coarse side of a box grater or finely chop it if you prefer chunks of apple in your pancakes. Set aside.
  • If using buttermilk, measure it out. If substituting with regular milk and vinegar or lemon juice, mix them together and let sit for 5 minutes.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. This ensures even distribution of the leavening agents and spices.

Step 3: Mix the Wet Ingredients

  • In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract. Stir in the grated apple.

Step 4: Combine the Batter

  • Pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture together using a spatula or wooden spoon. Mix until just combined—some lumps are fine, as overmixing can make the pancakes tough.

Step 5: Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  • Pour about 1/4 cup of batter for each pancake onto the hot surface. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
  • Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown on both sides. Repeat with the remaining batter.

Step 6: Serve
