Instructions
Step 1: Prepare the Ingredients
- Peel and grate the apple using a box grater, or finely dice it for a chunkier texture.
- Finely chop the onion and garlic. Sauté them in a teaspoon of olive oil over medium heat for 2-3 minutes, or until softened and fragrant. Allow to cool slightly.
Step 2: Mix the Sausage Mixture
- In a large mixing bowl, combine the ground chicken, grated apple, sautéed onion and garlic, sage, thyme, cinnamon, nutmeg, smoked paprika (if using), salt, and pepper.
- Using clean hands, gently mix the ingredients until evenly combined. Be careful not to overmix, as this can make the sausages dense.
Step 3: Shape the Patties
- Divide the mixture into 12 equal portions and shape each into a small, flat patty about 2-3 inches in diameter. Flattening them ensures even cooking.
- Place the patties on a parchment-lined baking sheet to prevent sticking.
Step 4: Cook the Sausages
- Heat the olive oil in a large skillet over medium heat. Once hot, add the sausage patties in a single layer, ensuring they don’t touch.
- Cook for 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C) when checked with a meat thermometer.
- Remove the sausages from the skillet and let them rest on a plate lined with paper towels to absorb any excess oil.
Step 5: Serve
- Serve the sausages warm alongside scrambled eggs, avocado toast, or a fresh fruit salad. For a more indulgent breakfast, drizzle with a touch of maple syrup.
