Ingredients
- For the pasta:
- 300g of pasta (traditionally tagliatelle or fettuccine works best, but any type can be used)
- 1 tablespoon of olive oil
- 1 teaspoon of salt (for boiling the pasta)
- For the yogurt sauce:
- 1 ½ cups of plain Greek yogurt
- 2 garlic cloves, finely minced or grated
- ½ teaspoon of salt
- For the spiced butter topping:
- 3 tablespoons of unsalted butter
- 1 tablespoon of olive oil
- 1 teaspoon of paprika (sweet or smoked, depending on your preference)
- ½ teaspoon of red pepper flakes
- ½ teaspoon of dried mint
- Optional garnishes:
- Chopped fresh parsley or dill
- Toasted pine nuts or walnuts
Instructions
1. Cook the pasta:
Start by bringing a large pot of salted water to a boil. Add the pasta and cook it according to the package instructions until al dente. Once cooked, drain the pasta, reserving about ½ cup of pasta water, and toss the pasta with a tablespoon of olive oil to prevent sticking.
2. Prepare the yogurt sauce:
In a mixing bowl, whisk together the Greek yogurt, minced garlic, and salt until smooth. To make the sauce more luxurious, you can thin it out with a few tablespoons of the reserved pasta water. Set aside.
3. Make the spiced butter topping:
In a small skillet, melt the butter over medium heat. Add the olive oil to prevent the butter from burning. Once the butter is fully melted, stir in the paprika, red pepper flakes, and dried mint. Let the spices bloom in the butter for about 30 seconds, releasing their aroma. Remove from heat.
4. Assemble the dish:
In a large serving bowl or individual plates, spread a generous layer of the yogurt sauce on the bottom. Top it with the cooked pasta, then drizzle the spiced butter over the top. Garnish with fresh parsley, dill, or toasted nuts, if desired.
5. Serve and enjoy:
Serve the pasta immediately while it’s warm. The combination of creamy yogurt, aromatic spices, and tender pasta will have everyone coming back for seconds.
