For the Fritters:
- 2 large sweet onions, thinly sliced
- 1 cup all-purpose flour

- 1 large egg, beaten
- 1/2 cup milk (whole or 2%)

Instructions
Step 1: Prepare the Onions
- Peel the onions and slice them thinly, separating the slices into rings.
- Place the onion slices in a large mixing bowl and set aside.
Step 2: Make the Batter
- In a separate bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and paprika (if using).
- In a measuring cup, combine the beaten egg and milk. Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms. The batter should be thick enough to coat the onions but not overly runny.
Step 3: Coat the Onions
- Pour the batter over the sliced onions in the large mixing bowl. Use a spatula or your hands to mix until all the onion slices are evenly coated with the batter.
Step 4: Heat the Oil
- In a large skillet or deep frying pan, heat about 1/2 inch of vegetable oil over medium heat. The oil is ready when a small drop of batter sizzles and floats to the surface.
Step 5: Fry the Fritters
- Using a spoon or small scoop, drop mounds of the onion mixture into the hot oil, pressing gently to flatten them slightly. Fry in batches, being careful not to overcrowd the pan.
- Cook each fritter for 2-3 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.
Step 6: Drain and Serve
- Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve the fritters hot with your choice of dipping sauce, garnished with fresh herbs if desired.
