Instructions
Step 1: Prepare the Chicken
- Pat the chicken breasts dry with paper towels to ensure the seasoning adheres well.
- If the chicken breasts are thick, slice them in half horizontally to create thinner cutlets for even cooking.
Step 2: Mix the Seasoning
- In a small bowl, combine the smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, black pepper, and salt.
- Sprinkle the seasoning generously over both sides of each chicken breast, pressing gently to ensure it sticks.
Step 3: Heat the Skillet
- Heat the olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering.
- Ensure the pan is hot enough to create a sear but not so hot that the spices burn.
Step 4: Cook the Chicken
- Place the chicken breasts in the skillet in a single layer, ensuring there’s enough space between them.
- Cook for 5-6 minutes on the first side, pressing gently with a spatula to create a good sear.
- Flip the chicken and cook for an additional 5-6 minutes on the other side, or until the internal temperature reaches 165°F (74°C).
Step 5: Rest and Serve
- Transfer the chicken to a plate and let it rest for 3-5 minutes to retain its juices.
- Garnish with fresh parsley and serve with lemon wedges for a bright, zesty finish.
